It is unique, it is rare and it is only from Crete.
Cretan Pine Thyme Honey is ā as the name suggests ā a natural mixture of honey from pine and thyme. It is produced exclusively in Crete and results from the special management of bees or the coexistence of late blooming thyme with honey secretions. Cretan Pine Honey is a Greek honey recognized by the European Commission as a Protected Designation of Origin (PDO) product. The stay of the thyme honey in the combs and its subsequent natural mixing with the pine honey, constitute a permanent local method of producing a special product.
More specifically, during the months of June-August, beekeepers in Crete move most of their bees to areas where thyme covers large areas ā southern and northern Rethymno, Chora Sfakion, Psiloritis, Lefka Ori, Omalos, Akrotiri, N. Lasithi, Ierapetra, Sitia etc.
Thyme honey remains in the brood rings as in Crete beekeepers do not use frames with brood. When the hives are moved to the pines so that the bees can feed on the honeydew of the insect M. hellenica L., the brood is naturally limited and the combs with the thyme wreaths are supplemented with the pine honey.
Pine thyme honey is considered of high nutritional value thanks to the wealth of different substances it contains. Among other things, its composition includes minerals and proteins and has a particularly beneficial effect on the respiratory and digestive systems.
Pine thyme honey due to its mixing results in an intermediate state that keeps the product liquid for at least 12 months from the date of its collection.
TASTE: Thyme honey has a rich taste, with moderate sweetness, duration and intensity.
COLOR: The color of pine thyme honey does not have the impressive color and shine of thyme, nor does it have the more cloudy tone that distinguishes pine honeys. Essentially, it has an intermediate coloring which, however, has referred to a completely genuine bee product.
AROMA: Floral tones, wood and resin aroma are discernible while its aroma is of medium intensity with a light feeling of fruit and candles.
