It is mixed honey, which bees harvest from the abundance of Greek plants. The mixing done inside the honeycombs by the bees themselves, causes the uniqueness of its taste. The main volume of the production of this honey is mainly based on the spring flowering and is produced from the nectar of the flowers, this is what determines the final properties of the honey.

The flower honey is an excellent mixture of a multitude of Greek plants with a unique sweet taste and unique aroma, and it contains all the beneficial properties of flower honeys, with a remarkable effect in favor of the proper development of children. It is characteristic for its contribution to the good functioning of the digestive system, it has an antiseptic and antimicrobial effect and generally offers energy and endurance.

The sweet taste of flower honey makes it an ideal substitute for sugar in confectionery. Its anti-bacterial and antioxidant substances make it the best choice instead of sugar. Its taste gives spring notes to your every recipe, it has a high sugar content and this is the reason why this particular honey crystallizes very quickly, within 6 to 18 months.

Flower honey consists of sugars which make up more than 95% of its solids, with fructose and glucose being dominant. It also contains proteins and amino acids and mainly proline. The presence of enzymes such as amylase and α-glucosidase is also important, which help convert sucrose into glucose and fructose. The minerals in the flower honey do not hold a large percentage: Nevertheless, the content of sulphur, phosphorus, magnesium, iron, chlorine, potassium, calcium, sodium, copper, manganese and silicon elevates its nutritional value.

The zinc content of citrus flower honey is remarkable, much higher than other honeys. Flower honey, to maintain its nutritional properties, must be consumed in a short period of time and protected from high temperatures.
