Thymarisio is collected from places-points with a large quota of thyme pollen grains, therefore a truly strong and excellent quality thyme honey, of high nutritional value.

Thyme honey is considered and is of excellent quality due to its excellent aroma and taste. Its variety, although it corresponds to only 10% of Greek honey production, has been identified like no other with Greece itself, it thrives mainly on the Greek islands.

Thyme honey has excellent beneficial and expectorant properties that soothe coughs and help heal typical winter ailments. Its main active ingredients are essential oils, excellent antiseptics that fight infectious diseases.

In fact, the antiseptic action reaches many areas: the intestine, the urinary tract, and even the entire respiratory system. Thyme honey also helps to disinfect, clean and fight viral attacks.

Thyme honey can be used for flatulence and intestinal gas. The essential oils additionally present in thyme improve our immune system and therefore stimulate the body by fighting fatigue.

Thyme honey is rich in carbohydrates in the form of glucose at a rate of about 30% and fructose at about 37%. Thyme honey contains more than 25% pollen grains – which can reach 85% – thanks to which it is rich in minerals and trace elements such as calcium, magnesium, boron, silicon, iron, zinc and manganese.

Also, thyme honey contains the flavonoids quercetin, hesperidin, catechin, kaempferol, etc. These amounts of beneficial flavonoids depend on the geographical origin from which the honey comes.

Usually with time and the drop in temperature, honey solidifies. In the case of thyme honey, it crystallizes into a fine grain with a very solid consistency, a process that happens quite slowly due to the fructose it contains.

TASTE: The taste of thyme honey is very similar to that of eucalyptus, perhaps because it shares the aroma of the essential oils that remain in the honey itself and give it a special taste. Its sweetness is moderate but remains persistent on the palate leaving a balsamic aftertaste.

AROMA: Thyme honey has a strong, spicy aroma, reminiscent of aromatic wood, mulled wine and cloves.

COLOR: Its color is amber with a tendency towards brown.

PRODUCTION REGIONS: Crete, Dodecanese, Cyclades.
